Brisket grilled cheese is a delicious and hearty sandwich that combines two classic comfort foods into one. It features smoked brisket and American cheese sandwiched between crispy buttered slices of Texas toast. Cooked brisket is a recipe requirement, so in addition to the sandwich recipe, we’re sharing a foolproof way to smoke brisket that yields impressive results every time. Check it out!

Ingredients

  1. 2.27 kg brisket flat
  2. 2 ½ tablespoons kosher salt
  3. 1 tablespoon black pepper
  4. 2 teaspoons garlic powder
  5. 2 teaspoons cayenne pepper
  6. 1 teaspoon dried oregano
  7. 1 teaspoon onion powder
  8. 1 teaspoon chili powder

Sandwiches

  1. 6 tablespoons unsalted butter softened
  2. 12 slices Texas toast
  3. 12 slices American cheese
  4. 680 g smoked brisket

Instructions

  1. Pat the brisket dry with paper towels and trim excess fat with a sharp knife. You want to leave ¼-inch of the fat cap intact.
  2. Remove the silver skin. It will not render during cooking.
  3. Preheat your Z-Grills (preferably with branded wood pellets) or other wood pellet grill to 250 degrees Fahrenheit.
  4. Combine the seasonings in a bowl to make the rub, then apply the rub all over the brisket. Gently massage it into the meat.
  5. Transfer the brisket to the pellet grill fat side up, close the lid, and smoke for 3 hours or until the internal temperature reaches 160-165 degrees Fahrenheit.
  6. Remove the brisket from the grill.
  7. Wrap the brisket in butcher paper while keeping it fat-side up, then return the wrapped brisket to the grates to smoke for 5-6 hours or until the internal temperature reaches 200 degrees Fahrenheit.
  8. Remove the brisket from the grill, rest for 30 minutes, then slice against the grain.

Sandwiches

  1. Preheat your Z-Grills (preferably with branded wood pellets) or other wood pellet grill to 500 degrees Fahrenheit.
  2. Transfer the skillet or griddle to the grates once hot, then leave that to preheat. The grill lid should be closed.
  3. Butter one side of each slice of Texas toast and add as many pieces of bread to the skillet or griddle as it will accommodate. Place buttered side down.
  4. Follow with a slice of cheese, brisket, and a second slice of cheese.
  5. Top with another slice of the bread (this time buttered side up).
  6. Close the grill’s lid and cook for 5-6 minutes, then flip and cook for another 5 minutes or until the cheese is melted.
  7. Remove the brisket grilled cheese sandwiches from the grill, slice, and serve. Repeat with the remaining ingredients until all the sandwiches are ready.

Notes

The brisket recipe yields more brisket than needed to make six brisket grilled cheese sandwiches.
